Hello everyone. I hope you are all having a great week. In this week’s blog post I thought I would share with you some meals I have every week. They are all vegan and amazing for you. I hope you enjoy!
Homemade Vegan, Wholewheat Pizza
This recipe is very easy to make and tastes amazing. Make sure and leave at least an hour and a half for the dough to rise.
Here is the recipe I use for the wholewheat dough:
100% Whole Wheat Pizza Dough
For toppings I usually go with a tomato-based sauce.
What you’ll need:
- Chopped tomatoes/passata
- Garlic
- Salt and pepper
- Oregano
Then I add any vegetables I have and lots of herbs. Once it’s cooked add some olive oil. You’ll love this one!
Pesto Pasta (wholewheat), Sweet-potato Chips and Roasted Vegetables
I love this dinner and we have it A LOT. Something I do now that I never did before going vegan is putting lots of different flavours and components in a meal. You eat a wider variety of food and therefore more nutrients and it tastes great. This meal is a great way to do this.
For the sweet-potato
- Sweet-potato (with skin, washed)
- Olive oil
- Good salt (Himalayan pink salt or some other unrefined, unprocessed salt)
That’s it! Just chop them up and add some olive oil and salt. You can’t go wrong. Cook for 30 minutes.
For the roasted veg
- Any vegetables you like (peas, sweetcorn, leek (I love this in roasted veg), onion, parsnips, carrots, courgettes, anything)
- Olive oil
- Salt
Chop them up and add the olive oil and salt! Cook for 30 minutes.
For the pesto pasta
- Some wholewheat pasta (cooked in salt)
- 2 packets of fresh basil
- Some walnuts, or any nut you like/have
- 2 cloves of garlic
- Olive oil
- Salt
Blend all of that up in a blender, add to pasta. A quick and easy dinner that is SO GOOD and amazing for you.
Stir Fry with Whole-wheat Noodles
This is Jacob’s meal that he created. I am going to share it with you anyway!
We get wholewheat noodles from Sainsbury’s – I haven’t heard of any other shop that sell these.
For the stir fry
- Olive oil
- Soy sauce
- Salt
- Any vegetables you like (we put lots in)
Cook the noodles and mix with vegetables. We often make sweet-potato chips with this too. We eat a lot of sweet-potato. Easy and quick meal!
Cauliflower Roast
This is a fancy vegan dinner! We make this every once in a while. It is a vegan Sunday roast!
To make this:
- One cauliflower
- Olive oil
- Salt
- Garlic
- Coriander, rosemary, parsley, thyme (fresh herbs of your choice)
- Turmeric
- Spices of your choice (don’t go too crazy – paprika, chilli flakes etc)
- Pepper
- Maple syrup
Mix all the ingredients together and pour over the cauliflower. Cook for 1 hour. The first 30 minutes covered, that last 30 without.
I often make some vegetable gravy with this, sweet potato, mashed potato, roasted veg – anything you like!
